This basic bread dough recipe is so versatile. You can use it for hamburger and hotdog buns, dinner rolls, french bread, loaf bread which I slice to make sandwich bread, even cinnamon rolls and cheesy garlic rolls. So many possibilities with one simple recipe.
This basic recipe will make...
- 2 loaves of bread- approx 1,000 grams each
- 2 9x13 pans of dinner rolls- 24 rolls 80 grams each, or 30 rolls 70 grams each
- 20 hamburger/sandwich buns- 100 grams each
- I generally make a loaf of sandwich bread and 10 hamburger buns in one batch, bake then freeze what I think won't get eaten within 3 or 4 days
Ingredients:
1000 g Freshly Milled Flour (approx 8 Cups)
72 g Olive Oil (1/3 Cup)
170 g Honey (1/2 Cup or more)
520 g Warm Water (2 1/4 Cup)
3 eggs
6-13 tsp Instant Yeast (18-40 g)
3 tsp Salt (20 g)
Directions:
- Mill your flour and set aside.
- Set your mixing bowl on a kitchen scale and add the next 4 ingredients: olive oil, honey, warm water and eggs (Make sure to reset your scale to "0 grams" before adding each ingredient)
- Add the flour and instant yeast. (I use 6 tsp yeast unless I need it to rise faster)
- Remove mixing bowl from scale and mix until ingredients are incorporated (2-3 min)
- Cover with a towel and let rest for 10-15 minutes so the flour can absorb the liquids.
- Add the salt and knead in the mixer for 10 minutes or until you achieve a "windowpane". Your dough will be sticky.
- Prepare your pans with parchment paper for easy cleanup.
- Oil your hands and work surface with olive oil then remove the dough from the bowl and divide accordingly.
- Shape the dough with tension and put in parchment paper lined pans.
- Cover with plastic wrap or put in your oven to rise- approx 30 minutes or until double in size and they don't spring back easily when gently poked.
- Remove from oven to preheat then bake until internal temperature is 185-190 F. -Loaves: 355 degrees for 40 minutes -Rolls/Buns: 375 degrees for 20 minutes (Can rub the tops of rolls with butter)
Notes:
- To get 1,000 grams of flour mill 1,000 grams of wheat berries. A good mixture is 800 grams (4 1/2 C) Hard White berries and 200 grams (1 C) Spelt berries. You can also purchase our already mixed and milled Bread Flour that is milled fresh to order. If you want a darker "wheatier" tasting bread, use Hard Red berries instead.
