About Us

Hi there!  I'm Amber and this is my family (minus our beagle Midas). Our family is probably not too much different than yours.  We stay busy with school, work, volunteering at our church, ball practice and ballgames. There's never enough time to get it all done and keep everything in order, but you just keep going, ya know...  Our faith and our family are important to us and have made us who we are.

My family is the reason I started this journey with fresh milled flour.  When my kids were little, I never would have considered myself a baker.  I had never made or baked a loaf of bread and everything I baked came out of a box.

My view of home baking changed when I came across a podcast with Alex Clark and Sue Becker.  (I've linked that podcast below if you'd like to watch it)  My eyes were quickly opened to realize that the store-bought flour I've eaten all my life and now have been feeding my family, hasn't served us well and could have even been a detriment to our health.

This is what I've learned since then:

  • Most store-bought flour has been processed to remove many of the nutrients that are essential for the health of the human body. Dietary fiber, Vitamins B and E, and minerals like iron, magnesium and zinc are a few of these nutrients that have been removed. 
  • Most store-bought flour has been stripped of its natural perishable ingredients. It's been bleached to make it more visually appealing. Then preservatives added to extend its shelf life.  We consider this "dead flour"
  • When you see "Enriched" on a store-bought bag of flour, this is an effort to add back a portion of the vitamins that were stripped in the processing of the flour.  However, the vitamins being added back are synthetic forms, not the natural form of the vitamin.
  • In recent years, information is becoming more widely circulated about the negative health effects of the altering of flour by the modern flour industry.
  • People are beginning to wake up and realize that they can take steps to start taking their health back into their own hands.
  • They are choosing premium quality ingredients over shelf stable lifeless ones.  They are slowing down to enjoy the food process again rather than settling for fast convenience.
